    And Homemade Mac n Cheese Smoked shotgun shells

    For this batch:
    3 lbs sausage of choice, I used 1 Jimmy Dean and 2 Tennessee Pride
    1- block cream cheese
    1- block extra sharp cheddar 8oz
    2- tablespoons or so minced garlic
    3 oz of Worcestershire sauce
    3 tablespoons all purpose bbq seasoning
    3 packs Manicotti Noodles
    3- 12 oz packs bacon, regular not thick cut

    I used my stand mixer, mix sausage, cheeses, garlic, Worcestershire and bbq rub. To make stuffing easier I used my Jerky Cannon, works great for this. Once all stuffed, wrap with bacon and put them in the fridge. Over night is best to help start softening the noodles. I made them up last night. Put them on the pellet smoker for about a hour, brushed all with BBQ sauce and went another 15 minutes. Once they all were reading 165 to 170 internal out they came.
    Now I’m Miserable!

    So this is way cool. I have the same shooter. No boiling the Manicotti before stuffing? This will be happening here. I make a Italian Sausage that everyone loves. I can see making the shotgun shells, placing them in a pan, covering with seasoned up Ricotta, covering all of that in a sweet Marinara, grating Parm over the top and baking.

    No sir, no boiling, straight out of the package. It is a must that they are made up at the minimum 12 hours before cooking. I have tried less and they are always tough. The longer the better by far. Had almost 18 hours from stuffing to cooking and you can cut them with a fork easily.

    My wife the Librarian did a search for Smoked Shotgun Shells and a whole new world opened up for me. Smitty39365 thank you for posting this up. I can see like Ketchn's Potato Chip Crappie Crust I will be experimenting seriously with this.

    You are very welcome! I am excited to see what you come up with. No doubt it will be delicious! A buddy of mine did a taco seasoning variation one time and baked in the oven topped with cheese, jalapeño, refried beans and sour cream. Very good also.
