The bouy can drift off a bit or you may have over or under shot the mark. I've had it happen to me and the deeper the water the more likely. What I do is slowly circle the bouy until I pick up the signal again. Two things that make it easier is to have your front DF transducer on the trolling motor or otherwise mounted up front near the TM. 2nd is the GPS. I don't know if your Helix is just sonar or a GPS combo but a GPS is invaluable in locating and marking brush piles.
If you just have one DF with the transducer on the transom it is more difficult especially if you are 15 feet away at the front. It's easy to get turned off line separated by that much space and the brush pile could be on one side or the other.
It can be done, it just takes practice and you'll get the hang of it.
