This time of year they should be up shallow, no more than 8 foot deep or so. Fish some kind of rocks, be it rip rap, or some broken chunk rock.
Some big night crawlers or some chicken liver with garlic salt added to it should do the trick. I would fish maybe 5 to 6 foot under a slip bobber with a good sharp circle hook. Instruct the young men no to set the hook immediatley if the bobber goes under but to let the fish move off about 5 feet with the bait. Then real and apply pressure with the rod.
Filet and fry em up.
The canal is good spot to drift through fishing the rip rap. The area around the Barkley State Park ramp is good too. Those rip rap surrounded islands should produce late afternoon into the evening and first light.
