Freezing them in water is the culprit! Get yourself a good vacuum sealer and forget about water. You will have more space in the freezer and your fillets will stay fresh tasting much longer.
I have a vacuum sealer, but have you bought the bags lately? They are EXPENSIVE to say the least......but hey, I might have to do that if the water is the culprit.
