    Zucchini? I got a cpl big ones. I do parmesan, bread, fried.
    Any suggestions, gotta favorite recipe?
    Any tips appreciated and thanks.

    Cut in half, scoop all the insides out and put in a pan. Rub olive oil on the 2 halves and bake at 350 til tender. Meanwile boil the filling in water til soft. Drain water off and fill the halves with the filling and put parmesan cheese on top and broil until browned. You can add all kinds of things to the filling you like. Crumbled bacon, green onion, mushrooms and such.

    alternate it with layer of eggplant for eggplant/zuc parmesan...or throw it out.

    I just tried something! Do as above but use boiled squash with the zucchini for the filling with jalapino peppers topped with mozerella cheese. I seasoned the hulls with cajun seasoning. It was quite hot but very good. Next time I will add green onions and leave the jalapino out.

    When the zucchini get big, I make zucchini bread and zucchini chocolate cake. Both are seriously good. I shred/grate the zuc. down, put in colander and let the moisture drain out, then freeze in 2 cup quantities in freezer bags.

    For the cake, just add 2 cups shredded zuc to a Duncan Hines dark choc. fudge cake mix. The zuc just melts into the cake, you'll never see it in there and it's so moist you don't need icing.


    For the bread:
    3 eggs
    1 cup oil
    2 cups sugar
    3 cups flour
    1 teaspoon salt
    1 teaspoon baking soda
    1 teaspoon cinnamon
    2 cups shredded zucchini

    If you like nuts and/or raisins, throw in 1/2 - 3/4 cup or so each.

    Divide batter between 2 greased loaf pans and bake at 350 degrees for 45 to 50 minutes.

    Cut up into bite sized pieces along with tomaters. Add Onion and Garlic if you like it. Season with salt, pepper, and Italian seasoning. Cook covered till tender on the stove top.

    I slice it length wise and toss it in olive oil then cover with cracked pepper and large grind sea salt. Throw it on the grill and yuuuummmmmyyy! Even my kids eat it.

    Slice it thin and fry in a light layer of olive oil. Add salt, pepper, and garlic powder to taste. When it's done, sprinkle with parmesan cheese and let it melt. You talkin about good and it goes well with anything off the grill.

    Thumbs up casserol

    Mom used to cook it with rice, cream of mushroon soup, ham and cheese in a cassarole. Poor folk food. Fills ya up and tastes great.:D


    Hard to beat breaded and fried on a piece of butter bread too.
