    Bear ham! Massachusetts has a bear season and we live near some of the best hunting areas. My buddy does a killer job of making these. It's his own brine modified over the years and then smokes it on a Yoder YS480. Everyone that's ever tried it has been blown away.
    I can't take the credit on this one, I just heated it up. We made some roasted vegetables and some leftover potatoes au-gratin mama made the other day. Name:  IMG_3988.jpg

    Years ago in New Orleans we had a restaurant called T-Patari's. I may not have the spelling right but I ate Bear there once. Lots of exotic animals were offered. Sadly it burned around 1979-1980. I've had some Bear sausage and Bear Jerky too. The experiences were so far in between and long ago I don't remember if I liked it or not. Certainly the 2 roasts you have pictured look magnificently prepared. I would love to slice a chunk paper thin to make some dipping rolls. Great post Bud.
