Yum, that’s some good looking food.

Had to make something good to eat to take our minds off of how the game is gonna turn out. We are all fat and happy now from the food, the game, not so much.
Poor mans burnt ends, smoked baked beans and Cajun pigs in a blanket. Yep, full as a tick

So, poor mans burnt ends, this was a big pack of stew meat from Sam’s.
I used just enough olive oil to coat then added a heavy dose of Meat Church Bbq rub, into aluminum pan and into the smoker. Temp set at 225 for about 2 hours, stirring about every 15 to 20 minutes. Then added about half a cup of brown sugar, about 5 to 6 ounces of honey, 1 cup of bbq sauce, more bbq rub and almost a full stick of butter. Cover tightly with foil and back into the smoker set at 350 for about two more hours until they were tender. Pulled the foil off and went another 20 minutes to tack up the sauce. This was a first time batch, I am wanting to do more now and experiment with different seasonings. They were really good though I have to say, everyone went back for more.

I'm late to the game here Brother but I hate I was late for this meal. Thank you for posting your process. Have you noticed Chuck Roasts are getting cheaper than a pork shoulder. I cooked a Chuck Roast in a pot day before yesterday, seared at 900 degrees first outside. I miss my pork shoulder but what I see in the stores in very low quality so I keep passing on them.
