    My mom was the youngest of 11 kids. She was the baby , born in 29'. The older siblings called her Annie . She thought we had to have a bait of Poke Salad Greens every spring. She even cut up and fried the stalks a few times like Okra .

    I don't care for the greens but the stalks are pretty good. Peel off the outer skin, chop and fry like okra.

    Default This is all your fault

    After reading the post on Poke Sallet I googled it to confirm I knew what it looked like. There was a video of a lady in Mississippi boiling, then sautéing some Poke and green onions. Looked good, then I remembered one of my wife's friends had given us some fresh spinach from her garden, and I had been given some green onions from another friend.
    I could stand it no longer. Went in the kitchen, cooked the spinach and onions in olive oil and butter and added some chunks of smoked salmon that I had done a while back.
    I just discovered a new dish. I can't tell you how good it was.

    Yuck! My grandma loved poke. Her kitchen stunk awful when she cooked it.
