In the image you posted from strongest to weakest returns. Red, yellow, green and blue. The red indicates a hard bottom or more dense object so more of the sonar signal is returned than a softer bottom or possibly a smaller fish. The blue is soft, more of the signal is absorbed and less is returned.

Also fish closer to the center of the cone producer stronger returns than fish of the same size near the edges.
