Target them like you're fishing for crappie, (minnows, jigs, jig w/minnow), but try a tad deeper. Like the bottom.

fishing in eastern nc , pamlico ,alligator ,roanoke area's . how do I target yellow perch , I have caught a few big ones while bass fishing or bream fishing so I know there are some there and have heard of them schooling this time of year . not wanting your fishing holes , just how to go after them like depth , time of year , time of day or does it matter , area like back up a creek or main river channel . thanks

Go to Hertford and put in the Perquimans River. Go right from the ramp and under the 2 bridges. Then start looking for the dropoffs and start fishing with shiners just off the bottom. You probably won't have any problem finding the area as it will probably be wall to wall boats there.
