There is literally no bad way to cook any of the " eyes". One of our favorites is to sprinkle with jerk seasoning and place fillets over thin sliced oranges. Slather with apricot jam and sprinkle craisins and chopped walnuts over them. A few pats of butter and they are ready to cover and bake or broil a little further from the heat source to keep the sugars from burning. We eat so much fried fish that we' re always looking for a change and my Canada fishing buddy found this one at a fancy restaurant in Minneapolis. Liked it so much he went to the kitchen and the chef showed him how it was done. We have even slow sautéed this recipe when we couldn't get the oven to work. Tried it with crappie but didn't really work- needs a firmer fish to survive the process,
