The best ones I have cooked on my smoker were two that I cooked and took to spring camp, they were suppose to come off the smoker about midnight and I fell asleep, had the timer set to go off at midnight, they set in there until they were good and cool and I woke about 6 the next moring and could hardly get em off the smoker they were so tender.
