    Feesh, them some excellent grill marks for sure!You're prolly sweating more than that cheese just trying to keep that temp down.

    Your right about that! I came close to losing it a couple of times, sure didn't want a mess like that.

    I love smoked cheese. I use an Amaz N Smoker tube for cold smoking. You can see it here http://www.amazenproducts.com/Produc...ductCode=AMNTS You could make one yourself fairly easy to I suppose. Any smoking pellets will work with it. The tube puts of almost no heat and a lot of smoke. I think smoked cheese is best after it has a couple of weeks to "rest" in the fridge. If you like cream cheese, try smoking it. It comes out awesome, but you have to keep the temps down with it.
