I put mine in the smoker dry, right out of the bag. If I soak them, they don't burn. They are just sitting in a tray above the heating element. When using wood chips on a charcoal grill I'll soak them.

Well, we haven't heard from EZ, in a few minutes......I bet he's eating that bird right now.
Them smoked birds look great and I have smoked quite a few myself but I have been converted to the injected deep fried bird and I ain't looking back!45 minutes to a hour fried versus 12 to 14 hrs smoking. As old as I am I'm always in a hurry to do everything!Those suckers do look awesome though!That a personal pan of dressing?:biggrin
SlabLapper, you better be careful with that deep fried turkey the way your luck with appliances and cooking has been lately! I agree they are delicious.
My 14 pound bird is history now, 1 leg for soap left. My sister needs to get the dressing fixed before next time. I heard she used store bought turkey gravy in it.
I chipped up hickory and cherry that I cut 2 years ago. The first add was hickory the second was cherry, the next 2 were a mix.
E Z, I used some fresh hickory on some shoulders a few years ago. It was strong.
