    Nice. Boil some hard boiled eggs and peel them. Put them in the pot while still on a simmer covered. When the eggs are dark roux colored, then and only then, it's ready. The eggs are good as well.

    Oh Buddha. We're stuffed. Had a loaf of French bread I ran under water real fast, then into the oven for bout 10 minutes, it gets real crusty that way. Does gumbo freeze well? I got 2 gallons of it
