This one works as we finish up the smoked brisket I did last weekend for dinner:
Cream cheese and pecans in this. Don't care for the doughnut type. They no longer put the baby inside because of a "said" choking hazard - you fellas know what I think about that.
Last night, arranged for an IADC student chapter meeting bringing in a pro in drill string and work string design. That was big fun, the kids tore that up:

I don't know how to cold smoke crappie, cold smoke anything actually. Have plenty in the freezer, but mainly fry on occasion, mostly bake wrapped in foil with onions and red bell peppers. Like I learned while in the Caribbean and Central America over the years. Wrap up and throw on the coals.
But, I can smoke a brisket in a heartbeat. For beginners, start with pork and chicken. It's the easiest if you have a smoker that you plug into the wall I'm told.
Ann has adjusted the antenna to watch Finding Dory this evening, sequel to Finding Nemo. I'll enjoy that while eating homemade pizza and king cake. That beats watching anyone killing ducks, gators, or big foot.

My friend said he used alder wood, and smoked them about two hours.
This sharp young lady is the newly appointed PR spokesperson for DNR. She presented our program at our monthly meeting Monday night. (Lexington Wildlife Chapter).
She is a native of Texas and got her Master's at.....drum roll.....Texas A&M. Said tell her fellow Aggie hello.

I have so enjoyed cooking on the last 8 or 10 sundays when i have not fished. A wonderful alternative to fishing in cold water. Trolling motor should be up by next weekend. So look out. I'll be back.
