Great article Cappy! My dad and I also have a lemon tree that we pick, it is at a friends house that doesn't pick the lemons! We also pick mayhaws at his house. He was planning on cutting the tree down last year but with a little convincing from my dad and myself, he kept the tree and we are able to pick from it anytime we want. We picked 4- 5 gallon buckets in about 15 minutes the end of last year and there was plenty left on the tree. I also juice the lemons. BTW, there is an easier way to juice the lemons than the way you are doing it. We have some electric juicers (about $15 from wal mart) and you cut the lemons in half, don't peel them and you squeeze the half and throw the peeling away when you are done or you can keep them and fill them with melted chocolate or vanilla, my wife loves these, she says it gives the chocolate a lemon flavor. I also make jelly with the lemon juice. Tried it for the first time last year and it came out great! It is really good over some cream cheese! I freeze mine also and have kept it for years. You are correct when you say to let it COMPLETELY thaw out or you won't get the right flavor. Thanks again for the article, thoroughly enjoyed it!
