Love the videos Cappy. Curious how long that juice will keep or is there a way of preserving it to make it last longer?

I pour a cup into an ice tray and freeze. Then into a zip lock for the freezer. I have some a few years old and can't tell the difference from fresh.

Peg and I use lots of juice 1 gallon last us for around 4 months in the fridge and stays fresh. Peggy puts it in salad dressing, we make several cakes and pan goodies etc. With out sounding like the Bubba Gump of lemon juice we use it lots why not we have plenty. WE freeze a bunch in gallons and the beauty of that is ya can make what ya want when you want. We usually make the jelly on rainy hot summer days when there aint much else to do or when ever inspiration hits us. We have kept a gallon for over 2 years in the freezer and it was fine when thawed out. Important thing to mention though is if you thaw out a jug ya have ta fully thaw it out before using.

Great article Cappy! My dad and I also have a lemon tree that we pick, it is at a friends house that doesn't pick the lemons! We also pick mayhaws at his house. He was planning on cutting the tree down last year but with a little convincing from my dad and myself, he kept the tree and we are able to pick from it anytime we want. We picked 4- 5 gallon buckets in about 15 minutes the end of last year and there was plenty left on the tree. I also juice the lemons. BTW, there is an easier way to juice the lemons than the way you are doing it. We have some electric juicers (about $15 from wal mart) and you cut the lemons in half, don't peel them and you squeeze the half and throw the peeling away when you are done or you can keep them and fill them with melted chocolate or vanilla, my wife loves these, she says it gives the chocolate a lemon flavor. I also make jelly with the lemon juice. Tried it for the first time last year and it came out great! It is really good over some cream cheese! I freeze mine also and have kept it for years. You are correct when you say to let it COMPLETELY thaw out or you won't get the right flavor. Thanks again for the article, thoroughly enjoyed it!
