Well I finally pulled my onions and what a crop. I chopped them all up, vacuum sealed them in bags of a little over four pounds, and put them in the freezer. Now we are fixed for onions for the years. At a minimum, I have 120 pounds of chopped and ready to use onions. A great haul for little effort. Check out the pictures below.

Fresh out of the garden, picked 4 more eggplant today and a handful of tomatos

Made a batch of Rotel from my tomatos and jalopenos I picked from the garden yesterday and ended up with 3 quarts, also put up 2 quarts of eggplant for caserol or dressing and made a quart of pico de gallo it was a busy afternoon. I wish you could smell that Rotel through the computer it made my mouth water.
