Man, they make jerky and summer sausage out of everything, but never heard tell about using coon. Had a lady at work cook me up one in exchange for some venison. She did collared greens and corn bread with. Excellent meal, but she was an expert.
Hear tale parboiled and BBQ'ed ground hog is some good eating as well.

You must be a expert cleaning them I remember from my teenage years. I watched some Country Cajuns clean them digging out all the glands.
So this morning's Raccoon was trying to escape when I went out with my phone for a picture. I watched it a bit then realized there is never any cat food left in the trap if a Coon is in it. Even though they are trapped their little paws pick up every morsel of dried cat food and eat it.

Just wishful thinking maybe I was slowing the critters in our backyard down. This is the third little possum I've caught. Also having a time keeping the squirrels out of my pecan trees. The aluminum sheeting I wrapped around the trunks are now doubled but still yesterday I shot a squirrel out of my best tree. I don't cut the "Tree Rats" any slack especially ones stealing Pecans that can cross 5ft of Aluminum.
