Mercy! . Nasty for sure, what's wrong with you with the head "cheese"? Many years ago as a kid, we toured as a class trip a processing factory (processing for sure big time like you wouldn't believe). Saw how bologna was made, haven't touched it since.

You must certainly be a transplant to Louisiana...Head cheese, souse, country pudding, scrapple is all good, But not liking baloney well that's just a whole other kinda messed up..

Makes me feel like the energizer bunny all day. Nice thing is, if you drop it in the water........it floats.

The head cheese I eat is made with butt roast and makes a great sandwich. I would trade 10 lbs of alligator meat for a half pound of Jerry Lee's hog head cheese or boudin. I would have figured you for someone that would like it.

Peanut butter and crackers are pretty much a mainstay on the boat, then I throw in some water and some peach tea. But when my wife goes with me it's a full on lunch, one of my favorites is a ciabatta bun with smoked brisket and avocado slices. I don't know how she came up with that combo but it is very good.

Sardines with green chillies and a bottle of water.
