I can tell you first hand they eat well. Grilled with lemon and butter. Trick is getting em cleaned. Start at the small fin on their back just in front the tail. Use a machette and whack of the skin on the back from that fin to the head. Then you can reach around inside em and pull em out the skin. Then it is easy just filet the meat off following the bones. Too much work for any smaller that what you caught. And dont eat the roe, very toxic to humans.
