A very raw, wet, windy day here in CT, about 45 degrees, on/off rain showers; just the perfect day to put some pork butt in the oven for my spicy braised pulled pork. Here is 12 lbs. of boneless butt, crammed in to the chicken roasting pan, ready to go in to the oven.

Layed over a couple of sliced sweet onions, salt and peppered, then chipotley peppers in adobo sauce slathered on and around, Dr. Pepper soda pop for a cooking liquid with roughly 1/4 cup light brown sugar tossed in for good measure. In to a 325 degree oven for 5-7 hours or until you can pull it with 2 forks, 190-200 internal temp, give or take.

2 hours in, first turn over to balance the exposure to liquid and dry heat
