    Default Weather too cold to fish, guess I'll cook instead


    A very raw, wet, windy day here in CT, about 45 degrees, on/off rain showers; just the perfect day to put some pork butt in the oven for my spicy braised pulled pork. Here is 12 lbs. of boneless butt, crammed in to the chicken roasting pan, ready to go in to the oven.

    Layed over a couple of sliced sweet onions, salt and peppered, then chipotley peppers in adobo sauce slathered on and around, Dr. Pepper soda pop for a cooking liquid with roughly 1/4 cup light brown sugar tossed in for good measure. In to a 325 degree oven for 5-7 hours or until you can pull it with 2 forks, 190-200 internal temp, give or take.

    2 hours in, first turn over to balance the exposure to liquid and dry heat

    Cooked covered,about 6 1/4 hours later, internal temp at 200, DONE!

    Looking over the list of ingredients, I forgot the 1/2 teaspoon of cumin per 5-6 lbs. of meat and a goodly dash of liquid smoke, perhaps 1 tablespoon per 5-6 lbs. as well.

    If you want it spicier, just add back in the cooking liquid to taste; try to skim off as much fat as you can for the best additional flavor going back in or put the meat back in to the skimmed liquid for a bit. Those chipotle peppers are pretty lively, at least to my taste buds; a little bit goes a long way.

    Ok,... so this one needs to be re-visited, dang that looks good, cumin is important, and I think that 6lb needs to get a smoker, as he's mentioned it to me a little bit. That's some good cold weather comfort food right there! I bet Rojo will chime in on this one! lol

    With poor weather on tap for this weekend, I had my daughter pick up a couple of boneless butts and this will be my project in between snow plowing on Sunday.

    2 boneless butts of about 5 lbs. each all prepped (other than the Dr. Pepper) and resting for a bit. I'll put them in the oven a bit later trying to time it for supper time so probably around 11am cook start time.
    One thing to remember is that these give up a lot of liquid while cooking so leave plenty of room in the pan for it.
