    it might be tasty , might being the keyword .....
    ate some yesterday , really skinny links , right tasty
    kinda zippy and pretty darn good on a brioche bun with a bit of ketchup
    after ya slice it a bit and give it a dose of toaster oven ....
    fast and easy and mmmmm ....

    One of the families I did special projects for went to Idaho had shot 2 Elk. They had the Elk processed there, frozen, and the family flew 5 large ice chests of the meat back to me for storage. I made Sausage, Jerky, Tamales, Griots, BBQ, etc. for over a year before we worked the bulk of the meat down.

    one thing for certain , they are some big animals , nice yield for sure ....and taste good as well ....a right good combo ....
    our elk come from I know not where , they get given to us , it all comes from a high end processing place north of me ....
    they do a pretty good job on wild game for sure
