Took some baby golden potatoes, boiled them until they are tender enough to smash. I had the griddle hot cooking steaks. Placed some duck fat on the griddle, smashed the potatoes until they are around a 1/4 inch thick. Once browned and crispy, flip them over . Once the second side is crispy, place potatoes on a foil covered baking sheet. Top with bacon bits, Ranch dressing of your choice and cheese. I would have added jalapenos at the time but I didn't have any. Popped it all in the oven to melt together, then broiled to brown off the cheese some. Name:  20231012_183150.jpg
