Man, one of my favorite cuts of meat. I braise mine in Cream Sherry with a little Seasoned Rice Wine Vinegar added to balance. Searing the short ribs on the TEC first really sends mine over the top. In Texas one of the best rubs for beef I ever tasted is made, it's called Rudy's Rub. I buy 6 at a time online, if you ever see it try on your ribs, it's fantastic.
