    Default What's on the menu?


    I decided not to fish this morning. A tournament in town meant I had to drag the boat farther than I wanted to. That winds me smack dab in the middle of the kitchen. What's on the menu? Red wine braised beef short ribs over mashed potatoes with bacon bit and baby bella mushroom topping. Name:  20220410_195157.jpg

    If I had went fishing. I wouldn't have been in the kitchen for a couple of hours. It was some mighty fine fork tender eating.

    Looks great. On top of mashed potatoes surely makes the dish.

    Man, one of my favorite cuts of meat. I braise mine in Cream Sherry with a little Seasoned Rice Wine Vinegar added to balance. Searing the short ribs on the TEC first really sends mine over the top. In Texas one of the best rubs for beef I ever tasted is made, it's called Rudy's Rub. I buy 6 at a time online, if you ever see it try on your ribs, it's fantastic. Now your post has made me hungry for Short ribs too. Great pictures and post Bud!

    These got a sear. I certainly feel it is required for the dish to reach it's potential. You know it is pretty good when there isn't much talking going on.
