Cast iron skillet, 1/2 in of lard and hand full of crappie fillets breaded in corn meal with salt and pepper. And like Firebug said just hot enough to get it frying. Best fish you will ever eat. Also best thing in the world to fry chicken in. Watched one of those cooking shows couple of months ago. Basically same recipe as SeaRay posted for their deep friers in the restaurant they were highlighting. Fantastic looking fried chicken.
