True that they all "work" to fry the fish ... the difference being how high the temp can be maintained before burning the oil. That and the nutritional value differences (which can be seen here : http://www.fitfrying.com/select-the-right-oil.html )
I use it because I can fry Crappie, Trout, and Salmon Croquettes in the same oil, and there's no transfer of the different tastes between them. And, of course, I'm not talking about frying them all at the same time, but consecutively in random order over time.
