I fry all my fish in a cast iron ceramic lined dutch oven. It gets hot quickly, stays hot and doesn't drop temp much if you put too much in it ( I never do that!). A small one with lid may set you back 30 bucks and it will work on stovetop, grill side burner, campfire or anyplace you can apply heat!
