I've cooked a mess of fish in mine plus fried chicken and a turkey last Thanksgiving. When you're using the small pot for frying you can shut off the gas every so often and it will be hot enough to keep cooking fish for a while and won't over cook that way. Also only drop about 2 or 3 breaded fish in the hot oil at a time. They'll cook a lot better that way. Take em out when they float to the top. If you put your breaded fish in the fridge for a while the breading stays on better. Peanut oil is best but expensive too. The blended (peanut and vegetable) oil works pretty good and don't break the bank.
