I just moved to the south and have never grilled fish. I have some amberjack and redfish with skin on one side. On a gas grill how high a temp, and for how long does it take to cook? Do I just put some foil down to cook it on?

Grilling
Hot and fast. Usually about 4-5 min. Purchase a fish basket to keep from flipping. Oil you grate add lemon juice and serve.
