This may be on one of the websites, but i bake crappie occasionally by dipping them in lemon juice, and coating them with a mixture of crushed saltine crackers mixed with parmesean cheese, and then sprayed on top w/ pam, or brush on olive oil to make the crust crisp. bake them on a cookie sheet at 350 for 15-20 minutes (depending on the thickness of the fillets). Very good, and a lower fat than deep frying.
