Baked drum is some good eating too...if they're caught out of a river and not a lake and they're not over 5 or 6 lbs.

Scale it, gut it, lop its head off. Salt and pepper the outside and inside and stuff it with onions and bell peppers and olives and an orange. Place in on a rack in your biggest oven pan. Don't wrap it in foil. 400 degrees for about 30-40 minutes. Peel the skin off and it's ready to go. Gotta make sure you use the rack though so it don't sit in the juices while it's cooking because sometimes they can be a little fatty/oily.

They taste 10X better than a trout.
