I kept a few Taco Crappie the other day just to make Tacos with for lunch.
Lettuce, more Creole Tomato, Purple Onion, Mexican Cheese mix, Zatarain's Fish Taco sauce, Sour Cream, and Taco Bell Hot Taco sauce covers the Crappie Fillets. Just did a light but sticks well coating on the fish a bit heavier coating on the Bell Pepper rings. I'm about to POP!

Bud I don't know how handy you are in the kitchen so take this for what it is. I cut the Bell Peppers kinda thick, at least a 1/2 inch. Put the cut slices in a ziploc bag with some AP Flour and shake them up. Knock off the excess and allow the slices to sit on wax paper for at least 10 minutes. Long enough for the remaining flour to make a glue from the juice in the Bell Pepper flesh. From there a Buttermilk & egg dip then into plain old seasoned fish fry. Leave them in the fish fry for 5 minutes before removing and frying. That crust is tender now but a bit durable too.
