Bud, did you salt the slices and let them sit long enough for the salt to draw out the excess water. If not salt both sides, let them sit a bit and pat the tomatoes dry with a paper towel. the towel will pickup the excess salt too. Afterwards put some AP Flour in a ziploc and put your slices inside, shake around to coat. Knock off the excess and lay the slices out on parchment and allow the flour to pull more water out and get sticky. In a bowl scramble well 1 egg and add 2 cups of whole buttermilk, mix well. Using 2 forks add one tomato slice at a time till the flour is wetted well then using the forks lift the slice out and drop into your fish fry and shake each slice added to cover. After that pull the slices back out, I use forks again and lay them back on parchment till ready to fry. After floating cook another few minutes to soften the hard center of the tomato. Drain on wire, never on paper towel.
