    If We keep discussing it and I will need to go grocery shopping. Seems when my bride made it years ago you had to shred the zucchini & squeeze the water out or something like that. Kinda seems like a lot of work. So many of the other breads I make are involved too.

    Best I remember that's exactly what you do to the zucchini. I've had the zucchini bread and it's tasty. I've never had persimmon bread. That will be on my try list soon.
