    Default NEXT time you ....


    decide to make meatballs yourself to put in your spaghetti ......
    never mind using beef
    if you want them melt in your mouth types
    use a lb. of mild pork breakfast sausage instead of beef ....
    one egg
    a half cup of Italian bread crumbs
    a heavy hand of fresh dried basil
    and a solid dash or 3 of Italian seasoning
    roll them gently , if you kneed them to much they tend be tougher
    boil them gently till they float and give them about 3 or 4 more minutes
    and add them to whatever your heart desires for meatballs in it ....
    pretty sure if you try this recipe on meatballs you wont ever look back
    thank me later .....mmmmm

    Awesome Bud. Switching to Pork in my Tamales was a huge hit. Nice post.

    There are quite a few "BARS" roaming the marshes here. They really grow when loosing their "Boys". The Chufa roots they live on really fatten them up. I was fishing bass in one of the drains a few years ago and this Bar was so fat as he rooted the roots out of the marsh his ears sagged almost to his eyes. 400-500 pounds easy. Lots of wild "Good" pork in that hog for sure. they don't have the Ticks like the Texas hogs have either.

    ticks ? never seen any on hogs here , you been on the wrong ranch if them hogs got em in Texas ....
    cattle guys eliminated them to some degree is my guess , years ago they were thick in lots of spots , about 25 or 30 years ago or even further back ....my grandpas place down near dimebox was flat out infested with them things back in 70 eez ....
    last time I even saw one in Texas was about 3 years ago on my pants leg .....not many around anymore
    but we never really had many in the places I travel these days if any .....
    I do not like ticks btw , got a scar on the inside of my knee still from about 50 years ago when one buried its head so deep it never came out !
    nasty animals for sure .....will say this though ....
    our dog got totally INFESTED with the dang things in Missouri a few years ago near Branson in 3 days just walking outside to use the potty , it was horrifying to say the least ,sure brought back some bad memories of the back when .....
    she was covered in what we call "seed" ticks , not many adult versions on her , but zillions of them tiny ones ....
    it was very not fun for sure

    My guess it was 12 years or so ago I went to a deer camp about 1-1/2 hrs below and west of San Antonio. Hogs were forbidden to be brought back to the camp due to the amount of ticks they had. When someone killed a hog they cut the hams off of it where it dropped and left the rest behind. I just assumed it was that bad everywhere in Texas. There's something to bite you, stick you, just all around harm you down there.

    Italian Sausage works well too. It’s what we use either combined with ground chuck or a a standalone meat in Lasagna. Just sayin…

    we have no lack of things that bite , poke , sting , attack , and generally try to jack ya up , thats a fact .....
    some areas are tick infested for sure , that far south there isn't big time cattle ranching like a bit further north, coupled with a huge amount of critters to feast on in that area , they might be really bad ....
    years ago cattle were the big carriers in lots of places , when I was a kid you did not want to travel any paths or areas there were cattle ....
    but with the introduction of so many tick control things these days , lot's of places seem void of them now ....
    makes me happy for sure , me no like ticks
