    but have been told they are great table fare
    ate some snappers back when , they were VERY tasty
    but these days we just save them from the road
    Rojo needs to do a softshell and show us ....
    come on bro , just do it ....

    Done right it is delicious. I’ve never fixed it but have eaten it in some of New Orleans finest restaurants.
    Sherry is added at the table.

    I make a killer Turtle Soup. Court of Two Sister recipe, Sherry is cooked in though. I think it has a better meld for lack of a better word. Sherry added at the table seems to overpower the softer flavors & complexity. Best I ever ate in the city my opinion. One of the best French Quarter restaurants. If I can get good turtle meat I use good Veal. I think the soft shells are protected in Mississippi & Louisiana but not positive. In Louisiana they will let you eat one of just about everything.

    I traded off a few big softshells over the years to folks that wanted them , gas money or a pack of smokes , heard tell they fry up well , no clue .....
    on a side note , the turtle soup I ate was likely with sherry and not white wine , no clue , just knew there was alcohol involved and VERY tasty ....
    alligator snappers are in serious decline and I am pretty sure protected here , not common snappers or softshells though best I know
