Hard to beat peanut for fish

Peanut oil .... I use it at home in an iron skillet & we've always used it at our Spring Fling events in the deep fry cookers.

I like it because it's not going to add to or retain from any flavors in what's cooked in it, and also it doesn't "smoke" at high temps.

I’ll have to try that as family has almost always used vegetable oil.
