Without knowing what kind of water you will be fishing, probably kayak for best all round.

Details on what type of water would be helpful. Also the style and way you fish.
The love for fishing is one of the best gifts you can pass along

I own all three, canoe, kayak and paddle jon. They all have their advantages and deficiencies. If I were to have to go to only one it would be my 17' paddle jon. It will float as shallow as a yak or canoe, it can take big water, it functions on the lake very stable. Mine is an older lowe they no longer make but blazer makes one. Fred at Current River Marine in Doniphin, MO can get one for you.

Blazer Boats - Paddle Jon. Perfect for floating and...

depends on many things I suppose , do you like to take friends ? john boat
do you like the lone traveler program ? kayak
    etc. etc.
i would vote kayak just because its a great one man vessel , easy to load and launch and here in Texas , don't need a boat tag/license to operate

There is a big difference in quality of kayak. My first was a 10’ lifetime paddle tamarack. While I felt stable I was very uncomfortable in big water. My new pedal kayak, Native 10’ Titan is much much more stable, floats better (500 lb limit) and covers water easily. I’m much more comfortable in bigger bodies of water. It’s the crazy drivers and speeding boats that bothers me now but that would be with any choice. I can throw it in the bed of my truck and go whenever. No trailer or taxes. Hardly no maintenance other than greasing pedal drive gears annually. I’ve never turned one over but I do recommend you have a good sense of balance with either a kayak or canoe. Whatever you decide, have fun and catch some slabs!
