I keep it simple and my cutting table depends on where I am at.
Lakeside primitive campsite or shore lunch- I have a 12volt fillet knife, cutting board, and garbage bags on the boat and fillet on the bow.
If the lake has a cleaning station, that's where you will find me.
Last option is at home. I actually have two options at home. I put my boat gear on my trailer storage box and fillet everything on the trailer. Or I pull out my 6' folding plastic table, garden hose and go to town in the yard under an oak tree. My main problem at home is disposal of the guts. garbage comes on Thursdays. They build up one heck of a stank during the week in the summer. Usually I put them in the freezer in the basement until garbage day. But I have been known to forget them in the freezer. Almost thawed guts for dinner one day. Wifey wouldn't have been to happy about that one.
