    Not sure Ann, have never tried them baked. As far as the Coc. Cream pie goes, my wife would love that! I'm not big on cocunut, you make a lemon? lol

    Here's your recipe for hot water cornbread that makes about 15 or 16 silver-dollar sized hush puppies. It's from Cane River Cuisine

    1 cup cornmeal
    1/2 cup flour
    1 teaspoon salt
    2 teaspoons sugar
    1 teaspoon baking powder
    1 small chopped onion

    Sift first 5 ingredients together mixing with the chopped onion. Add enough cold water to dampen the dough. Next, add enough boiling water to make a cake-like consistency and drop from a spoon and fry in hot shortening or peanut oil until brown.

    Sometimes I will chop up one mild jalapeno and add to it. If I want to make the cornmeal lighter, I will mix it 50/50 white cornmeal and yellow cornmeal. My personal favorite is to add a couple of spoonfuls of beer in place of the cold water to dampen the dry mixture before adding the hot water.
