I have always rolled the fillet's up and put a tooth pick through them. Drop the rolled up fillets in boiling water for about 3-4 min's, then take out of the boiling water and put into an ice water bath. That cools them off quick. Then keep on ice until you serve them with cocktail sauce. They taste a lot like salad shrimp when fixed in this manner.

the storms yesterday must have been too much for them. we only had a doz., if that ,come home with us this morning. oh well, thats fishin eh.
