thank you, yeah ah dont do it with crappie. lol too soft. i ended up doing some like i do halibut fillet.
glass dish with lid.
lay fillets in a single layer
pour melted garlic butter over them and season how you like
microwave till flaky done
let cool a bit, fork some shrimp sauce over them and devour.
still to soft (and too mild flavored in my opinion), for most people. im easy to please though and pretty full now. :biggrinburp

I have always rolled the fillet's up and put a tooth pick through them. Drop the rolled up fillets in boiling water for about 3-4 min's, then take out of the boiling water and put into an ice water bath. That cools them off quick. Then keep on ice until you serve them with cocktail sauce. They taste a lot like salad shrimp when fixed in this manner.

yeah tater, thats what we were talking about. thats grub! ill do that often when i only keep a few. makes for a fast easy lunch. pretty easy on the ice too.

well i found out this morning, the party is over. :dono the storms yesterday must have been too much for them. we only had a doz., if that ,come home with us this morning. oh well, thats fishin eh.
