    Flour meal cajun season for the meal. Beaten eggs for wash. Fillet in egg wash then to meal then to 350 degree peanut oil consistent temperature. Don't pre batter a bunch makes em clumpy and soggy. Batter and fry.

    I've always done this when frying. If it's chicken I give it 10-15 minutes, but for catfish/crappie in cornmeal I only let them rest a couple minutes.

    I add flour to the mix as well, 2 parts meal 1 part flour.

    white corn meal works great, its makes a lighter coating it sems like than yellow meal

    Yea, I use milk and egg wash and do not prepare ahead. I batter enough to fit fryer and wait until there almost done before I batter more.

    x2. Straight white cornmeal for deep frying, yellow cornmeal + panko for oven fried.

    We use the zaterans fish seasoning and use the bass pro mealer and it works well.

    We do add a little seasoning to the zaterans but it has a good flavor.

    Walmart has it, a yellow box in the meal isle.
    It's CRAPPIE season!!!!!!!!!!!!!!!!!!!!!!

    I mix milk and a couple eggs together in a bowl and put my fillets in for about 2 hrs, then roll them in zaterans. It works good for me.
