    hmm I always filet skin off.. Sounds like I need to try skin on. I' ll have to give it a try.

    Makes sense to me. Kind of like frying chicken with the skin on. The Colonel makes the best chicken skin.

    well looks like u forgot my ph# again lol I leave the skin on some time to blacken them
    If it will hold cornmeal it's big enough for me !!!!!!!!!

    Goose may have a different version . Dry the fillets on a paper towel. Wet fillets stick to hot cast iron. I heat cast iron skillet smoke'n hot . Just a small pat of butter toss on fillets and cook couple minutes each side. Best coated with blackening seasoning before cooking. They make great fish tacos! I use the soft flour tortias and everything you put on regular Taco .

    Sounds easy. I thought there was more to it. Can you get the skillet too hot? I have never pushed the limits of my cast iron.
