I fillet all my fish, even yellow and white perch = no bones.

If scaling, (my ole great aunt edith from down CF's way: Eden (ton) N.C.) always told me you have to pop the YP's back to make it easy to scale. Hold the head and the tail, pull in opposite directions until you hear the spine audibly "Pop". It does make them easier to scale. Just some ole' timers stuff.
