I got some boards but how do you know the depth the plastic are running.

Look up Precision Trolling Data or PTD on your iPhone app store. It's a $50 app but tells all the current info on current cranks. You could also look up Troller's Bible but they are no longer in print and sell for up to $400 on used book sites.
